Goodbye 2010!

Amen to that! I wont even go into how much 2010 sucked for me but I will say that as rotten a year it was, it was a great year! Yeah, I know, a little contradiction but I know you all understand!

I started 2010 weighing around 215, I was 213 on surgery day in March and today, 9 months later, I weigh 164 lbs!!!! I am well on my way to my 50 lb goal by my bandiversary. I am currently down 49 lbs and I am one happy little camper!

I am so looking forward to 2011. I look forward to continuing on my journey to get healthier an thinner and I am looking forward to being with all of you on your journey's. My wish for everyone is to have a happy and HEALTHY 2011, we will do it!

HAPPY NEW YEAR EVERYONE!!!!

Just a quickie....

post to let you know that we made it home safe and sound today...one day later than planned and I am now getting ready to greet Steves brother, SIL, daughter and father and they will be with us until New Years Day!

My sister looks at my getting stuck in NY for an extra day as divine intervention as she and her two children were scheduled to leave for a trip to Las Vegas this morning and guess whose flight was leaving at the same time? Ours of course! She had a meltdown yesterday, missing her husband and my dad and she was so comforted that Steve and I would be with her and the kids at the airport. She was so strong on Christmas day, trying so hard to make it a good one for her kids, and it was. My brother in law would be so proud of her! That is the only thing I keep telling her that seems to help her. We joke about it though because there are things that she does on purpose to get him to come and haunt her such as raising the heat...my BIL was for lack of a better word, CHEAP! and was always turning it down in the winter and up in the summer! She will be in Las Vegas until Friday and I know they will have a great time! I am so proud of her!

As for me, I will be trying to pop in here and there for the rest of the week. I have never in my life looked at a new year like I am looking at this one. I am looking to lose 15 more pounds in 2011, I know I will! Thank you all for being such a support to me and always being here with advice or a kind word. 2010 has really sucked for me and my family but my personal accomplishment of finally being able to attain my weightloss goals has been beyond my imagination.

If I don't get back here until after the new year, Happy New Year to you all!

Blizzard of 2010!

I hope everyone had a Merry Christmas (those who celebrate)!

This could truly be the last Christmas we spend on Long Island for a long time! Last year we drove to Long Island for Christmas in a blizzard...it took us 3 days when it normally would take 1. This year, it may still take us 3 days to get home even though we flew! Our flight tomorrow has been cancelled and we are tentatively booked on two others, one tomorrow night and one on Tuesday morning. We will see!

We had a wonderful Christmas being with our family. Santa was so good to me this year as he had my engagement ring reset! What a nice old guy!



As good as it was being here this past week, I really was looking forward to going home tomorrow morning! We have Steves family coming in on Tuesday night so this will be really interesting if we don't get home by Tuesday! Always an adventure.

I am also looking forward to getting my eating/exercising back on track. Thankfully my band has been 'reminding' me not to eat but man, I have been making horrible choices! It amazes me how horrible I have been. I really thought I was past all this, you know, falling into the "going home and eating" routine? The only bright side is that I know what I have to do and even better, I know that I will do it! That part is new to me..in the past I would just continue with my bad choices but those days are gone!

So, wish me luck with getting home tomorrow! I will let you know how that turns out!

I'm outta here tomorrow...

So, I wanted to wish everyone a very Merry Christmas! I cannot thank you all enough for joining me on this journey! I weigh 50+ lbs. less this Christmas than I did last year and I feel so much better!

We are flying to NY to be with our family for Christmas and I am so looking forward to being together especially for this, our first Christmas without my Dad and Jimmy. My sister is doing better than I could ever have imagined and I just pray that she gets through this holiday without too much pain, if that is even possible.

Tomorrow is my youngest daughter Jordan's birthday. She will be 20 years old. Holy Schmoly! Where the hell did these years go? I have been blessed with these two gorgeous girls who have brought so much joy and happiness to my life! If I can only get them both to move to FL! Actually, Jordan is making plans to finish her college education here with Steve and I. The plan is for her to move here in May. I.Cannot.Wait.

I am typing this blog from my new MacBook Air. It is so different from my PC but so far, I love it. It weighs nothing! It will be a pleasure using this for work and not having to drag my old PC around with me! This was an early Christmas present from my husband who I find myself thanking all the time! He has truly been my knight in shining armor. Not a day goes by that I don't thank God that we found each other.

Anyway, before I get all mushy and blubbery, I just wanted to pop on and to wish you all a Merry as I may not have the time to do it later in the week! If I can, I will!

Christmas Cards and Food Porn...Ahhh!



This is the first Christmas in a very long time that I have not sent out cards. I tried, really hard to get into the "spirit" of Christmas by decorating my home, shopping for gifts and baking cookies. The cards, I could not do. You want to know what I realized throughout this "getting into the spirit thing"? Its all BS! The "spirit" I was looking for will never be there again. Everything changed for me on 5/11/10 and there is nothing from before that I can ever expect to be the same because two very important people in our life were violently taken from us.

This doesn't mean that I will never have the Christmas spirit again, it just means that what was normal for us and me specifially, will be different going forward. Our family is looking for the new "normal" as things will never be what they were. We lost our innocence on that day, you know what I mean? The "something like that never happens to our family" kind of thing. One day at a time, that is what I keep preaching to my sister, one day at a time.

So, even though I wasn't up to cards this year, Brutus was and was all set to go with his antlers on! Sorry, my little furbaby, I promise you'll get your Christmas card next year!

Dinner last night was fantabulous! They ordered Eggplant Rollatini as an appetizer for the table and I tasted Steves. Delish! For my entre I orded Veal Osso Buco which I shared with my Steve and my neighbor Steve! That was just falling off the bone delish! Than, both couples ordered the S'mores Bread pudding! Oh.My.Lanta!!!! I actually left the restaurant with the recipe which will be deadly if I ever make it! Uh, turns out there is no bread in this "bread pudding"....can you say Krispy Kreme Glazed Donuts?!?! Who knew? Well, now that I know, unfortunately, i may never be eating this again! Sometimes, ignorance is really bliss!

Twas the Saturday before Christmas...


and I am sitting at work doing nothing waiting for the phone to ring with someone on the other end wanting to buy a house! It ain't happening!

I am out of here at 5 though as we have confirmed dinner plans with my Canadian neighbors for tonite. Last night Steve and I got some Chinese food and it did not go down well at all! I had about 3/4 of a BBQ Spare rib and 1/2 of a dumpling and that was all she wrote! Stuck! Not sure but I suspect it was the dumpling.

Tonight we are going to the Plantation Bar and Grill which is a great little Bistro about 1 mile from our house. They opened up last June and I have not been disappointed in the 5 or 6 times we have been since. To have a place that is this good within walking distance is unbelievable actually! Normally, we have to drive at least 20 miles to get to a decent restaurant. I kid you not. Even for a bagel, 20 miles! There are places closer, although not that much closer, 10 miles maybe? This is also the place where I had that unbelievable S'mores Bread Pudding, remember? Oh, man...why did i think about that?

My scale is definitely responding to my more protein, way less carbs plan and I am very happy about that! I'm not sure what I will be having for dinner tonight but I'm thinking a little steak and salad. So far my day looks like this:

I went to the gym this morning for a step class and the instructor was 20 minutes late! The front desk came in after 10 minutes to say that she called and couldn't find her car keys but was on her way. Normally, I would not have had a problem with this but this particular instructor is late every single Saturday by at least 5 and sometimes 10 minutes. A bunch of us regulars did not buy the "lost keys" excuse and said something to management. There is a big sign on the door to the fitness classes asking that members be on time, and ready to work-out 5 minutes prior to class start time...we feel that if we, the paying members are getting there on time, the instructor surely should be there. This particular instructor is fairly new, maybe 2months? If this is putting her best foot forward, we are all in trouble!

I am usually the one telling others to calm down, breathe, but today I was pissed. It was a rainy Saturday morning and I would have loved to stay in bed a little longer but I got up and out and made it to the class on time. For what? We ended up doing only 20 minutes of what is usually 45 minutes of a step class and 20 minutes of weights. Some of the others even asked her to do more step and less weights and she just did what she wanted! Than, she even complained that because of Christmas and New Years being on Saturday, she would be making less money this month because the gym is closed. If she keeps it up, we will not be going to her class anyway and she will not have a class!

When I came home from the gym, I made a double batch of chocolate chip cookie dough for my hubs. He has been patiently waiting for me to make them and I just never got around to it since I baked two weeks ago. So, I made the dough, chewed my gum (this trick works great and I dont eat the dough!) rolled up 3 logs of dough in parchment paper and I will be baking them for him either later tonight if we get home early enough or tomorrow after I get home from work in the afternoon. He is so good to me...the least I can do is make him his cookies. I put them in the freezer and he takes out 3, not 2, not 4, but 3 cookies every night and has them as dessert! Who does that? In my past life, I would take 4 cookies. 2 is not enough and 3 is an odd number! This is why he is thin, folks!

3 more days and we are off to Long Island for Christmas! I cannot wait. We are getting there on the 21st which is my daughter Jordan's 20th birthday! I cannot believe she is that old! I, on the other hand, feel & look better than I did 20 years ago...Thank you Band!!!!!

Happy Friday!

Not to mention its the last weekend of shopping before Christmas! Whew...where the heck did this year go? Where the heck did this month go? Crazy!!!

I went to th gym this morning and we did our usual weights and what-not. My trainer told me that beginning in January, she wants to increase my cardio, not the time just the intensity! Can't wait for that but hey, lets face it, I have a sexy "mother-of-the-bride" gown to get into in March so I will be doing whatever she tells me to.

Nothing much going on today...working until 1 than I am going to get some kind of facial that is going to make me look 20 years younger..hmmm...we'll see about that! I may be going out to dinner tonight with my neighbors who are in town from Canada. We love them but they are always a last minute kind of couple so it makes it a little hard to plan my eating for the day. That being said, so far my eating will be looking like this:

B: Greek Yogurt, Kashi Go Lean Cereal
L: Tuna with mayo on some lettuce
S: S.E.I. Chocolate Mounds Bar protein drink (YUMMERS!!!)
Skim Milk
Calories: 545
Protein: 84

This actually leaves me with plenty of calories for dinner and I will just have to come back later and add it in!

I feel so much better when I am not ingesting empty calories such as christmas cookies! Yes, they are good but man, they really make me feel a lot more like Santa than I care to!

I hate my metabolism!

In the month of November I lost 9.8 lbs. which was unbelievable for me as I have been averaging 5 lbs. a month. I was a very happy girl. Today? Not so much. so far during the first half of December, I have gone up and down and today I am sitting at 167.4 lbs which is 1.4 lbs MORE than I was on 11/30/10.

What have I been doing differently? I have been doing my regular excercise and I wear a heart-rate monitor to accurately measure calories burned. I have been journaling my food intake and I have been keeping it to 1200 calories (give or take) a day. I do NOT use my exercise calories to eat more either! The only difference in my eating is that there are more carbs going in AND my protein is down! Oh, those damm carbs! I am super-sensitive to those suckers! When will I learn?

Todays goal will be to get in at least 80 grams of protein! My plan is this:

Breakfast: S.E.I. Chocolate Protein Shake, 1/2 cup skim milk
Lunch: Chobani plain vanilla yogurt with 1/2 cup Kashi Go Lean Crunch
Dinner: 4 oz. of Ground Sirloin with 1/2 cup spinach
Snack: English Toffee Klondike Bar - 100 Calories (oh so good)

Total: Calories - 831
Protein - 98

I am trying to get to gym today for a spin class at 5:30. If I do, I will burn between 500 - 600 calories.

Recipe Exchange

My mother, sister and niece were visiting us last weekend and we had a very nice visit. Fast, but nice. As you can imagine, the holidays have been very tough on us this year, especially my sister. She is doing ok though and I judge her well-being on how much we laugh vs. how much we cry. We did an equal amount of both this weekend so I will call that a success!

I sent them home with a ton of Christmas Cookies that I baked last weekend. My girls insisted that they couldn't wait to eat them until we got there on the 21st! Good riddance! I am glad they are out of my freezer and are now probably all gone if I know my kids!

Next Tuesday we will be leaving for 6 days in NY! I can't wait to see the girls. It is so hard being here in FL and them in NY. Why can't they just listen to Mama and move here? Actually, Jordan is seriously talking about moving here in May after the Spring semester is over and finishing school down here. I have every finger and toe crossed! (remind me how I was so happy and excited when I start complaining about her messy room!)

Judi had a great idea to share some recipes via our blog so here are my contributions.

We are having Steve's family for a few days after Christmas and I was just going through my recipes to find something easy to make for breakfast. The Hash brown Casserole is easy because I put it all together the night before and just bake in the morning. The Cheese Danish is also something I make ahead. I make the filling the night before and just do the pastry part in the morning. Very easy! The last recipe I just made last night and it was a hit with everyone except my husband who doesn't like Panettone! Oops! Next time I will use raisin bread!



Hash Brown Casserole

6 to 8 servings

Ingredients
• 3 tablespoons butter
• 1 small yellow onion, chopped
• 4 cups frozen shredded hash browns
• 1 pound bulk sausage, mild, hot or sage
• 2 1/4 cups whole milk
• 8 large eggs
• 1 teaspoon salt
• 1/4 teaspoon black pepper
• 1/4 teaspoon freshly grated nutmeg
• 2 tablespoons Dijon mustard
• 8 cups cubed French or Italian bread, crusts removed
• 2 cups (1/2 pound) grated Cheddar
• 2 cups (1/2 pound) freshly grated Parmesan

Directions
Preheat the oven to 350 degrees F.
Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray.
Melt the butter in a large frying pan. Add the onion and saute over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart. Saute until soft, about 5 minutes.

In a second frying pan, saute the sausage, breaking apart large clumps. When the sausage is cooked through, remove it from pan.
In a large mixing bowl, combine the milk, eggs, salt, pepper, nutmeg and mustard, briskly to blend.

To assemble, spread the onions and hash browns evenly at the bottom of the greased dish. Place the bread cubes evenly on top of hash browns. With a slotted spoon distribute sausage as the third layer. Pour the milk and egg mixture over these layers. Add Parmesan as the next layer, while then adding the Cheddar.
*Cook's Note: Save a few tablespoons of Cheddar for the last 10 minutes of baking, where you can add a fresh topping of melted Cheddar.

Bake the casserole, uncovered for 45 to 50 minutes, until puffed and golden brown.


Easy Cheese Danish

Ingredients
• 8 ounces cream cheese, at room temperature
• 1/3 cup sugar
• 2 extra-large egg yolks, at room temperature
• 2 tablespoons ricotta cheese
• 1 teaspoon pure vanilla extract
• 1/4 teaspoon kosher salt
• 1 tablespoon grated lemon zest (2 lemons)
• 2 sheets (1 box) frozen puff pastry, defrosted
• 1 egg beaten with 1 tablespoon water, for egg wash

Directions
Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
Place the cream cheese and sugar in the bowl of an electric mixer fitted with a paddle attachment and cream them together on low speed until smooth. With the mixer still on low, add the egg yolks, ricotta, vanilla, salt, and lemon zest and mix until just combined. Don't whip!

Unfold 1 sheet of puff pastry onto a lightly floured board and roll it slightly with a floured rolling pin until it's a 10 by 10-inch square. Cut the sheet into quarters with a sharp knife. Place a heaping tablespoon of cheese filling into the middle of each of the 4 squares. Brush the border of each pastry with egg wash and fold 2 opposite corners to the center, brushing and overlapping the corners of each pastry so they firmly stick together. Brush the top of the pastries with egg wash. Place the pastries on the prepared sheet pan. Repeat with the second sheet of puff pastry and refrigerate the filled Danish for 15 minutes.

Bake the pastries for about 20 minutes, rotating the pan once during baking, until puffed and brown. Serve warm.

Panettone Bread Pudding with Amaretto Sauce

Ingredients
Sauce:
• 1/2 cup whipping cream
• 1/2 cup whole milk
• 3 tablespoons sugar
• 1/4 cup amaretto liqueur (I used Bourbon)
• 2 teaspoons cornstarch

Bread Pudding:
• 1 (1-pound) loaf panettone bread, crusts trimmed, bread cut into 1-inch cubes*
• 8 large eggs
• 1 1/2 cups whipping cream
• 2 1/2 cups whole milk
• 1 1/4 cups sugar

Directions
To make the sauce: Bring the cream, milk, and sugar to a boil in a heavy small saucepan over medium heat, stirring frequently. In a small bowl, mix the amaretto and cornstarch to blend and then whisk into the cream mixture. Simmer over medium-low heat until the sauce thickens, stirring constantly, about 2 minutes. Set aside and keep warm. (The amaretto sauce can be made 3 days ahead. Cover and refrigerate. Rewarm before serving.)

To make the bread pudding: Lightly butter a 13 by 9 by 2-inch baking dish. Arrange the bread cubes in the prepared dish. In a large bowl, whisk the eggs, cream, milk, and sugar to blend. Pour the custard over the bread cubes, and press the bread cubes gently to submerge. Let stand for 30 minutes, occasionally pressing the bread cubes into the custard mixture. (Recipe can be prepared up to this point 2 hours ahead. Cover and refrigerate.)

Preheat the oven to 350 degrees F.
Bake until the pudding puffs and is set in the center, about 45 minutes. Cool slightly. Spoon the bread pudding into bowls, drizzle with the warm amaretto sauce, and serve.

***I used two 1 lb. loaves of Panettone as I thought the egg mixture would be too much for the one. By the time I trimmed the crusts from both, it was probably 1.5 lbs and it came out perfect! If I'd only used 1, the bread would have been swimming in the custard!

Christmas Cookie Picture Post

Today was baking day! I found out that the secret to not tasting the cookie dough is to keep chewing gum! I went through a pack. That is my downfall usually, the raw dough, not the end-product!

Picture Post

Thank you all for your very supportive comments yesterday...I don't have to tell you how much you've all helped me get through this year!

As promised, the following are a few pics from my decorating today and a pic of Steve and I from Disney. I ended up getting a black bow and decorating a Poem/Picture that I had put together for my Dads memorial service. The poem is titled "My Last Ride" and was written by the uncle of a young man who was killed in a motorcycle accident. The poem could have been written for any biker who has ever died while riding his "Tin Pony".

Here are the words to this beautiful poem. (I actually read this during the service, not sure how, but I did):

My Last Ride

My hands are clenched around chrome bars
the engine's rumble sounds so sweet.
I twist the throttle with my palm
and roar off down the street.

The slapping of my leathers
and raging winds on either side,

Another Magical Day...in more ways than one!

Tuesday morning I woke up to a very nice surprise on the scale....166!!! Are you kidding me? One more lb. and I will weigh what I did in 1985! To say I am happy and in love with my band is an understatement!

After all the excitement in the house about the scale, we drove over to Disney to spend some time with my friend Carmen who was visiting for a week. Steve and I stayed at Disney's Boardwalk Villa's as a guest of my sister using her Disney Vacation Club points which would have expired on 12/31. We had a great day at Epcot and Hollywood Studios than yesterday morning the boys did the Richard Petty Race Experience. This was Steves Christmas present by the way.

While the guys were playing with race cars, the girls did the Disney Yuletide Fantasy Tour. We went to a few Country's in Epcot and learned about the different cultures than we went to The Grand Floridian to look at all their holiday decorations...Can I say Gingerbread House??? Oh my...is that baby a big one! I bought some fresh gingerbread cookies too. How could I resist? Than it was off to the Magic Kingdom to see their decorations and than finally, we went to a huge, huge storage building that houses all the Christmas holiday decorations! Did you know that the Disney Christmas Day Parade on ABC every year is taped? Who knew? Not me...I thought it was live. Nopers, beginning today, tomorrow and Saturday, they will be taping the parade for viewing on Christmas!

And, guess what, tonight we are driving back over to Disney with our friends Ro and Vinny to have dinner in Japan and then watch/listen to the Candle Light Processional with Corben Bernson as the narrator! This will be the first time that I am seeing this and I am really excited! I just have to dig out my gloves and scarves as it will be freezing tonight here in Sunny Florida!

When we came home I was raring to go in finishing decorating my house! Poor Steve. He spent last Sunday fighting with to 48 in. Wreaths that I bought for our two new front windows. Alas, the wreaths won. He hung one up with these suction cup things and it fell down! Monday, we found extra big suction cup things and he said he'd hang one and if it was still on the window when we came home on Wed., he'd hang the other one. What a beautiful site to see that wreath still hanging when we drove up! Within 20 min. of getting home, we had wreath # 2 up next to his twin! Yay! My goal is to have my tree up by tomorrow night and I promise, I will post pics!

I am trying so hard to get into the Christmas Spirit this year and keep pushing myself to do things. Originally I wasn't going to do any baking but now I am thinking of doing a little and freezing the cookies so that I will have them for when my company comes next week and the week after Christmas. My sister is having a really hard time decorating and I told her about a radio show I was listening to and the advice given to Widow in her exact situation (kids still at home) was to decorate with the family usual but acknowledge the fact that you are still in mourning by putting a black ribbon on a wreath for example. She liked the idea so maybe this will help her a little. I cannot imagine what she is going through but I try to be there for her whenever she needs me.

On the band front, things have quieted down with the PB incidents. It turns out that every time I PB'd, it was either that I ate too early that day or white meat chicken was involved! No more Chicken for me for a while! Funny enough, I had a half of piece of french toast last night for dinner (delish! First time in 8 months!) and on Tuesday at Disney, we had lunch at Via Napoli (great new restaurant in Italy) and I had 1/2 of a small rice ball and one small slice of very crispy pizza without incident. it took a while going down but I ate very slowly and life was good! I think that I am in a very good place with my band right now....that is all I am sayin'!
