I just had to share this with you....I was making meatloaf for dinner and at the last minute decided to make individual loaves in a cupcake pan. I have to say that they looked adorable but most of all they were delish! Usually, I chop an onion very fine and add that but this time, in addition to the onion, I shredded a zucchini and added that also. The meat was so moist! I weighed a loaf after it was cooked and it was a total of 4 oz. I had almost a full one and Steve had 2. I baked them at 375 for about 35 minutes. I have 6 leftover so I froze them and I will get 2 more meals out of them. Not bad!

I am going to have to try that with meatloaf! Once I move again and am living alone that's the perfect way to have it handy.
I made it tonight, too...and tasted so good after 3 week of liquids.

I have done the vegetables hidden in my meatloaf thing before but the muffin size is a coolarific idea..I will use it next time.
AWESOME idea with the muffin size! And adding the zucchini too. Did you use all beef or a mix of meats?
Buy a disposable muffin tin for these, and poke a few holes in the bottom of each muffin space. Put the filled holy tin on a rack over a baking sheet and then into the oven. After you cook them, drain the grease and see the fat you are not eating with these awesome eats. Turkey works also. !!!

OMG, you are making me hungry! I made these with ultra lean turkey burger when I first got banded and got consistently stuck. I think the lean turkey was too dry. I want to try them again....
